I don't know if you remember the ConAgra promo that we had at Albertsons a couple months ago, but I ended up with quite a few cake mixes. This morning I was craving apple cinnamon muffins and couldn't find a recipe for them so I thought I would just experiment and see what happened. They turned out AMAZING!!!!
So if you have extra cake mixes, make muffins :)
Here is my "recipe" for apple cinnamon muffins:
1 box yellow cake mix
2 eggs
1/3 cup oil
1/2 cup water
1/4 cup applesauce
1 medium apple, peeled, chopped
cinnamon to taste (I used a LOT, but I love cinnamon!)
mix together, put in muffin/cupcake cups, bake at 350 for 20 minutes
super easy and they were definitely a hit this morning!!
